I heard Art of Animation is pretty nice (the new one right?) We rode by and it looked cool.
We are certified Disney nuts. Is it a pain in the ass? Yes! Long lines, hot temps, big crowds, but you can't deny the magic! You guys have a great time!
Just stayed at Animal Kingdom Kidani Village with the Savannah view. My boss man paid for our room with his Disney points, which was probably over $2000. I can't complain! The only problem is, now every time we stay in a hotel, my 2 year old can't understand why there are not giraffes and zebras outside our balcony.
Definitely book a breakfast at Tusker House in Animal Kingdom. It's awesome grub, your daughter will love the characters, and you get to enter the park before it opens. It was the best place I think we ate. Just give it an hour before you ride Everest or you'll be leaving a mess.
One tip I wish I had learned earlier: Most of the crazy rides like Everest (which your daughter is too small for) have a hidden entrance Single Rider line that you can normally walk up to and step right on. I rode Everest twice in a row with no wait, when the doubles line was 1.5 hours.
