I have never heard of oven canning. In this article they mention that dried foods can last 20-30 years. If properly sealed I don't think you would have to worry about moisture. Definitely no bugs.

i wouldnt do it, mason jars are not meant to be used in a dry heat like that and can break.

Just don't can things that have oils. The article mentioned nuts, but I'd be wary of whole wheat flour oils going bad as well.

We use the oven when we make " cake in a jar ". It's really good and lasts for years.
