You've seen them...those little thin quesadillas on the kids menu. These aren't them. Extra-medium size steak quesadilla with cheese and some other stuff I don't even remember.
Take some bacon and render in the pan, throw in onions, cook until translucent add in dry black beans that have been soaked or canned if you don't feel like waiting
Take about 8-10oz London Broil/Flank Steak and grill it with a wood chip box full of hickory
Take if off, slice it thin as you can get it or use a meat slicer if you have one
(1) red onion sliced thin
(1) red pepper roasted on the grill when you do the London Broil
(1) about a 1/4 cup cilantro cut fine
Add whatever cheese you like, I use pepper jack and cheddar
Flour tortillas on the grill or in a pan with some oil
Garnish with some sliced green onion
Get your hot sauce and sour cream out!
Slap it all together
