What's for dinner tonight?

I know there have been threads on this before but people get new recipes or get tired of the same old stuff, and it's good to branch out a little.

Tonight I'm doing an easy crock pot meal that serves for 2-4 and can also function as a southwestern style party dip.

Required: Crock Pot
Slow cooker bag (makes cooking/cleaning super easy)
One FROZEN chicken breast per individual
One bag of frozen corn off the cob (16-19oz bag)
One can black beans, drained (15 oz)
One jar of salsa, chunky. Spicy level to your taste (16-24oz)
One 8oz block cream cheese (add at the end)
Biggest bag of Tostitos Scoops available

Put chicken, black beans, salsa and corn and mix
Cook 6 hours on high (or until chicken is done) stir if able. I've let is sit unattended the whole time
30 minutes prior to being done, add the 8oz block of cream cheese and stir.

The chicken should have shredded entirely while stirring.

Serve immediately and eat it with the Scoops. Makes a filling, fun and easy meal

Sorry, not a crockpot but,

Chicken Breast
Taco Seasoning Mix
Salsa
Sour Cream
Black Beans

Put Taco Seasoning in a bag and shake the chicken to coat with the mix,
Bake at 350 for 35-40 minutes
Top with salsa and sour cream
Black beans on the side.

Prep time about 5 minutes and good eating!

Spouse had to go into work early and I had to work late. Tonight was leftover "Hot Brown" casserole and "Chocolate-Bourbon Pecan Pies" from Sat's Derby party.

Heres one of my favs... I cool A LOT on my tragaer smoker.

1 large sweet onion sliced into 3/4-1 slices and leave 2-3 rings together and cover in your favorite spicey bbq sauce and wrap with 3-4 slices of bacon.
Put on the grill or smoker at 275-300 for 90 mins and bam!!!
I cooked this this past weekend with some bbq chicken and pork chops with cajun season salt with lime juice!
